Instructions

  1. Prep the Chicken: Start by cutting your chicken breasts into large, even chunks—think bite-sized but hearty. This helps them cook quickly while staying tender. Pat them dry to get that perfect golden sear.
  2. Season Everything Well: In a bowl, toss the chicken with salt, black pepper, onion powder, paprika, and Italian seasoning. Make sure each piece is well-coated with those fragrant spices.
  3. Sear to Perfection: Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter. Once the butter has melted and begins to sizzle, add the chicken in a single layer. Don’t overcrowd—work in batches if needed.   4. Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add the remaining butter and the minced garlic. Stir constantly for about 30 seconds—just until the garlic is fragrant, not browned. Pour in the chicken broth and use a wooden spoon to scrape up all the flavorful browned bits from the bottom.
  5. Bring It All Together: Return the chicken to the skillet and stir to coat in the garlic butter sauce. Let everything simmer for another 2–3 minutes so the flavors meld together.
