Description

Delicious cherry and white chocolate blondies, perfect for a sweet treat.


Ingredients

Scale
  • 2 cups (400g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 teaspoon (2g) baking powder
  • 1/4 teaspoon (1g) salt
  • 1 cup (200g) dried cherries
  • 1 cup (200g) white chocolate chips
  • 1/2 cup (100g) chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9×13 inch baking tray.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in dried cherries, white chocolate chips, and walnuts if using.
  7. Spread batter evenly into the prepared baking tray.
  8. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  9. Allow to cool completely in the tray before cutting into squares.
  10. Serve at room temperature or store in an airtight container for up to 3 days.

Notes

  • For best results, use room temperature butter and eggs.
  • The walnuts can be omitted for a nut-free version.
