Delicious cherry and white chocolate blondies, perfect for a sweet treat.

- 2 cups (400g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) unsalted butter, softened
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1/2 teaspoon (2g) baking powder
- 1/4 teaspoon (1g) salt
- 1 cup (200g) dried cherries
- 1 cup (200g) white chocolate chips
- 1/2 cup (100g) chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (180°C). Grease a 9×13 inch baking tray.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Fold in dried cherries, white chocolate chips, and walnuts if using.
- Spread batter evenly into the prepared baking tray.
- Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool completely in the tray before cutting into squares.
- Serve at room temperature or store in an airtight container for up to 3 days.
Notes
- For best results, use room temperature butter and eggs.
- The walnuts can be omitted for a nut-free version.
