- Make the peanut butter filling: In a medium bowl, mix the creamy peanut butter with powdered sugar until it forms a smooth, scoopable mixture. Using a small spoon or a cookie scoop, portion the filling into 1-inch balls and place them on a parchment-lined plate or tray. Freeze for at least 30 minutes while you prepare the cookie dough.
- Prepare the chocolate cookie dough: In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside a separate mixing bowl to beat the softened butter, brown sugar, and white sugar until light and fluffy—about 2–3 minutes. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chocolate chips with a spatula or wooden spoon.
- Assemble the cookies: Scoop about 2 tablespoons of chocolate cookie dough and flatten it slightly in your palm. Place a frozen peanut butter ball in the center, then wrap the cookie dough around it, sealing the edges completely. Roll gently to form a ball. Place the stuffed cookie dough balls onto a parchment-lined baking sheet, leaving space between each for spreading.
- Bake to perfection: Bake in a preheated 350°F (175°C) oven for 12–14 minutes. The cookies will look slightly soft in the center but will continue to firm up as they cool. Allow them to rest on the baking sheet for 5 minutes before transferring them to a wire rack.
