Description
This rich and fluffy chocolate butter cake is perfect for any celebration.
Ingredients

- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup (1 stick) salted butter, softened to room temperature
- 1/2 cup vegetable oil
- 1 3/4 cups granulated sugar
- 3 large eggs, room temperature
- 2 large egg yolks, room temperature
- 1 1/2 teaspoons vanilla extract
- 1 1/4 cups buttermilk, room temperature
- 1 cup (2 sticks) salted butter, softened to room temperature
- 1/2 cup unsweetened cocoa powder
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 4–5 Tablespoons heavy whipping cream
- sprinkles for garnish, optional
Instructions
- Preheat the oven to 350°F. Lightly spray a 9x13x3-inch baking dish with baking spray and set aside.
- In a medium-sized bowl, stir together the flour, baking powder, and baking soda. Set aside.
- In a stand mixer with the paddle attachment, cream together the salted butter, vegetable oil, and granulated sugar for 3 minutes until fluffy.
- Add in the eggs, one at a time, until fully mixed in. Mix in the egg yolks and vanilla extract.
- Add half of the dry ingredients and stir until combined.
- Add half of the buttermilk and stir until combined. Repeat with the remaining dry ingredients and buttermilk, scraping down the sides as needed.
- Pour the batter into the prepared baking dish and smooth out the top.
- Bake for 35-40 minutes until a toothpick inserted into the center comes out clean. Cover loosely with foil if the cake is browning too much.
- Let cool completely.
- For the frosting, beat the salted butter until smooth. Add cocoa powder and mix until combined.
- Add powdered sugar little by little, mixing completely before adding more. The mixture will be thick.
- Add vanilla extract and heavy cream. Mix until smooth. If too thick, add an additional Tablespoon of heavy cream.
- Turn speed up to medium-high and whip for 3 minutes until light and fluffy.
- Frost the cake with an even layer of frosting. Add sprinkles if desired. Cut and serve.
Notes
- Note: if using unsalted butter, add one teaspoon of salt to the dry ingredients.
- Baking times can vary based on oven and altitude; rely on the toothpick test for doneness.
