Description

This rich and fluffy chocolate butter cake is perfect for any celebration.


Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup (1 stick) salted butter, softened to room temperature
  • 1/2 cup vegetable oil
  • 1 3/4 cups granulated sugar
  • 3 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/4 cups buttermilk, room temperature
  • 1 cup (2 sticks) salted butter, softened to room temperature
  • 1/2 cup unsweetened cocoa powder
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 45 Tablespoons heavy whipping cream
  • sprinkles for garnish, optional

Instructions

  1. Preheat the oven to 350°F. Lightly spray a 9x13x3-inch baking dish with baking spray and set aside.
  2. In a medium-sized bowl, stir together the flour, baking powder, and baking soda. Set aside.
  3. In a stand mixer with the paddle attachment, cream together the salted butter, vegetable oil, and granulated sugar for 3 minutes until fluffy.
  4. Add in the eggs, one at a time, until fully mixed in. Mix in the egg yolks and vanilla extract.
  5. Add half of the dry ingredients and stir until combined.
  6. Add half of the buttermilk and stir until combined. Repeat with the remaining dry ingredients and buttermilk, scraping down the sides as needed.
  7. Pour the batter into the prepared baking dish and smooth out the top.
  8. Bake for 35-40 minutes until a toothpick inserted into the center comes out clean. Cover loosely with foil if the cake is browning too much.
  9. Let cool completely.
  10. For the frosting, beat the salted butter until smooth. Add cocoa powder and mix until combined.
  11. Add powdered sugar little by little, mixing completely before adding more. The mixture will be thick.
  12. Add vanilla extract and heavy cream. Mix until smooth. If too thick, add an additional Tablespoon of heavy cream.
  13. Turn speed up to medium-high and whip for 3 minutes until light and fluffy.
  14. Frost the cake with an even layer of frosting. Add sprinkles if desired. Cut and serve.

Notes

  • Note: if using unsalted butter, add one teaspoon of salt to the dry ingredients.
