- 2 cups full-fat coconut milk
- 1 cup ripe mango puree (fresh or frozen)
- 1 cup diced fresh dragon fruit
- 2 tablespoons honey or maple syrup (to taste)
- 1 teaspoon pure vanilla extract
Instructions
- In a medium bowl, combine chia seeds and coconut milk. Stir well and let sit for about 10 minutes until thickened.
- Mix in mango puree, honey or maple syrup, and vanilla extract until well combined.
- Cover the mixture and refrigerate overnight to allow the chia seeds to absorb the liquid.
- Chop fresh dragon fruit into small cubes while waiting for the pudding to set.
- Once ready, layer the pudding into bowls or jars and top with dragon fruit cubes and additional mango slices if desired.

- For extra sweetness, adjust honey or maple syrup to your taste.
