Description

This delicious chia seed pudding is made with creamy coconut milk and topped with fresh mango and dragon fruit, creating a healthy and refreshing dessert.


Ingredients

  • 1/2 cup chia seeds
  • 2 cups full-fat coconut milk
  • 1 cup ripe mango puree (fresh or frozen)
  • 1 cup diced fresh dragon fruit
  • 2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a medium bowl, combine chia seeds and coconut milk. Stir well and let sit for about 10 minutes until thickened.
  2. Mix in mango puree, honey or maple syrup, and vanilla extract until well combined.
  3. Cover the mixture and refrigerate overnight to allow the chia seeds to absorb the liquid.
  4. Chop fresh dragon fruit into small cubes while waiting for the pudding to set.
  5. Once ready, layer the pudding into bowls or jars and top with dragon fruit cubes and additional mango slices if desired.
