A comforting slow cooker recipe featuring tender chicken thighs and flavorful vegetables.
Ingredients

- 2 lbs chicken thighs (boneless skinless)
- 2 tbsp poultry seasoning
- 1 pinch salt and pepper
- 3 large red potatoes (quartered for small or cut into 6–8 pieces for larger)
- 1 cup carrots (baby or sliced small)
- 1 cup chicken broth (or stock)
Instructions
- Add chicken thighs in a single layer, season with poultry seasoning and salt and pepper.
- Add potatoes and carrots into pot and pour broth over everything.
- Cook on low for 4-6 hours or until meat is cooked thru and vegetables are tender.
Notes
- For a thicker broth, you can add a cornstarch slurry during the last 30 minutes of cooking.
- This recipe can easily be doubled for a larger group.
