Description

A comforting slow cooker recipe featuring tender chicken thighs and flavorful vegetables.


Ingredients

Scale
  • 2 lbs chicken thighs (boneless skinless)
  • 2 tbsp poultry seasoning
  • 1 pinch salt and pepper
  • 3 large red potatoes (quartered for small or cut into 68 pieces for larger)
  • 1 cup carrots (baby or sliced small)
  • 1 cup chicken broth (or stock)

Instructions

  1. Add chicken thighs in a single layer, season with poultry seasoning and salt and pepper.
  2. Add potatoes and carrots into pot and pour broth over everything.
  3. Cook on low for 4-6 hours or until meat is cooked thru and vegetables are tender.

Notes

  • For a thicker broth, you can add a cornstarch slurry during the last 30 minutes of cooking.
  • This recipe can easily be doubled for a larger group.
