Turkey and Biscuit Skillet

Description

This hearty turkey and biscuit skillet dish combines the savory flavors of ground turkey, vegetables, and cheese, topped with fluffy biscuits for a comforting meal.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 8 oz mushrooms (sliced)
  • 1 medium red bell pepper (diced)
  • 1 medium onion (diced)
  • 2 tablespoons tomato paste
  • 1 pound ground turkey
  • 1 tablespoon chili powder
  • 1 (14 oz) can diced tomatoes (undrained)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter (cut into pieces)
  • 6 oz grated cheddar cheese
  • 1/2 cup buttermilk

Instructions

  1. Preheat the oven to 425ºF.
  2. Place a large, oven proof skillet over medium-high heat. Add the oil and heat until shimmering.
  3. Add the bell pepper, onion, and mushrooms. Cook until softened, about 8-10 minutes. Season with salt and pepper.
  4. Push the vegetables to the edge of the skillet, and add the tomato paste to the center. Cook, stirring it around slightly, until it starts to loosen up, about a minute. Stir the tomato paste into the vegetables.
  5. Add the turkey to the skillet along with the chili powder. Cook, breaking up the turkey as it cooks, until browned and cooked through.
  6. Add the undrained tomatoes and cook until some of the liquid evaporates, about 3-5 minutes. Season with salt and pepper, and remove from the heat.
  7. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Cut the butter into the flour mixture using a pastry cutter or a fork until only very small pieces remain.
  8. Stir the cheese in until coated, then stir in the buttermilk.
  9. Form 7-9 biscuits with the dough, depending on the size of your biscuits and size of the skillet. Place the biscuits on top of the turkey filling in the skillet.
  10. Transfer the skillet to the oven and bake until the biscuits are cooked through and the filing is bubbling, about 20 minutes.

Notes

  • Adjust the chili powder to taste for more or less spice.
  • For a lighter version, you can substitute ground turkey with ground chicken.
