  • ¼ cup heavy cream (optional, for extra creaminess)

Instructions

  1. Sauté the aromatics: In a large skillet or deep sauté pan, melt the butter over medium heat. Add the diced onion and cook until softened and translucent, about 3–4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  2. Add chicken and vegetables: Toss in the shredded chicken and frozen peas and carrots. Stir everything together and let it warm for 1–2 minutes. This step helps the veggies release some moisture and ensures everything heats evenly.
  3. Add the liquids and pasta: Pour in the chicken broth and milk, then stir in the uncooked pasta. Sprinkle in the thyme, along with a good pinch of salt and pepper. Bring everything to a gentle boil, then reduce the heat to a simmer.
  4. Cook the pasta: Cover and simmer for 12–15 minutes, stirring occasionally, until the pasta is cooked through and has absorbed most of the liquid. If needed, add a splash more broth or milk to keep things saucy.
