- 1 cup granola or crushed graham crackers

- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the Peaches: In a bowl, combine peach slices, brown sugar, and cinnamon. Mix well and let sit for about 10 minutes to allow flavors to blend.
- Make the Cream Mixture: In a large bowl, whip the heavy cream until soft peaks form. Gently fold in the Greek yogurt, honey, and vanilla extract until smooth and creamy.
- Assemble the Parfait: In serving glasses or a large bowl, start by adding a layer of the cream mixture. Add a layer of granola or crushed graham crackers on top of the cream. Add a layer of the peach mixture. Repeat the layers until the glasses or bowl are full, finishing with a layer of cream on top.
- Chill: Refrigerate the parfaits for at least 1 hour before serving to let flavors meld together.
- Serve: Garnish with additional peach slices, a sprinkle of granola, and mint leaves if desired.
