Description

This spicy lemon jelly combines the tartness of fresh lemons with a hint of heat from jalapeños, making it a unique and flavorful spread.


Ingredients

  • 2 cups fresh lemon juice
  • Zest of 2 lemons
  • 2 cups water
  • 12 jalapeños, thinly sliced (seeds removed for mild heat)
  • 4 cups granulated sugar
  • 1 box (1 oz) powdered fruit pectin

Instructions

  1. In a medium saucepan, combine lemon juice, lemon zest, water, and sliced jalapeños.
  2. Bring to a gentle boil, then reduce heat and simmer for 10 minutes to infuse flavor.
  3. Strain out jalapeños and zest if a smooth jelly is desired, then return liquid to the saucepan.
  4. Stir in powdered pectin and bring to a rolling boil, stirring constantly.
  5. Add sugar all at once and return to a rolling boil for 1 full minute.
  6. Remove from heat and skim off any foam.
  7. Carefully pour hot jelly into sterilized jars, leaving 1/4-inch headspace.
  8. Seal and let cool completely at room temperature until set.
  9. Refrigerate after opening.
