Description

This delicious Lemon Drizzle Pudding Cake is a perfect balance of sweet and tangy flavors, ideal for dessert lovers.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup milk
  • 1 cup powdered sugar
  • 3 tablespoons freshly squeezed lemon juice (for drizzle)
  • Vanilla ice cream or whipped cream (optional, for serving)
  • Lemon zest curls (for garnish)

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Prepare Baking Dish: Grease an 8-inch square baking dish.
  3. Combine Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt.
  4. Cream Butter and Sugar: In a separate large bowl, cream the butter and granulated sugar until light and fluffy.
  5. Add Eggs and Lemon: Beat in the eggs, one at a time, followed by the lemon zest and lemon juice.
  6. Mix Wet and Dry: Gradually add the flour mixture to the wet ingredients, alternating with the milk, beginning and ending with the flour. Mix just until combined.
  7. Pour Batter: Pour the batter into the prepared baking dish and smooth the top.
  8. Bake: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Prepare Lemon Drizzle: While the cake is baking, mix the powdered sugar and lemon juice in a small bowl to create the drizzle.
  10. Drizzle: Once the cake is out of the oven, immediately poke holes all over the top using a skewer or fork, then pour the lemon drizzle over the cake.
  11. Cool and Serve: Allow the cake to cool slightly. Serve warm with vanilla ice cream or whipped cream, garnished with lemon zest curls.

Notes

  • For a more intense lemon flavor, increase the lemon zest quantity.
  • Ensure the butter is at room temperature for better creaming.
  • This cake is also delicious when served chilled, allowing the lemon flavors to develop further.
