- 2 cups all-purpose flour
- 3 cups milk
- 4 eggs
- 2 tbsp butter (melted)
- 1 tsp salt
- 1 lb ground beef or turkey
- 1 onion (finely chopped)
- 2 garlic cloves (minced)
- 2 cups tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 cups milk (for cheese sauce)
- 2 tbsp butter (for cheese sauce)
- 2 tbsp all-purpose flour (for cheese sauce)
- 1 cup grated cheese (Cheddar/Parmesan)
- Salt and pepper to taste (for cheese sauce)
- 1/2 cup grated mozzarella cheese for topping
- Fresh parsley for garnish
Instructions
- Prepare the Crepes:
- Mix flour and salt in a large bowl.
- In another bowl, whisk milk, eggs, and melted butter.
- Gradually add the wet ingredients to the dry ingredients, whisking until smooth.
- Heat a non-stick pan over medium heat. Pour 1/4 cup of batter, swirling to coat the pan. Cook until golden, then flip and cook the other side.
- Repeat for all batter, stacking crepes with parchment paper in between.
- Make the Meat Sauce:
- In a skillet, cook onion and garlic until translucent.
- Add ground meat, cooking until browned. Drain excess fat.
- Stir in tomato sauce, oregano, basil, salt, and pepper. Simmer for 10 minutes.
- Prepare the Cheese Sauce:
- In a saucepan, melt butter over medium heat.
- Stir in flour to form a roux. Cook for 1 minute.
- Gradually add milk, whisking continuously until thickened.
- Stir in cheese until melted. Season with salt and pepper.
- Assemble the Crepe Lasagna:
- Preheat oven to 350°F (175°C).
- In a baking dish, layer a crepe, spread a thin layer of meat sauce, and a drizzle of cheese sauce.
- Repeat with remaining ingredients, finishing with a crepe on top.
- Sprinkle with mozzarella cheese.
- Bake:
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes or until cheese is bubbly and golden.
- Serve:
- Sprinkle with fresh parsley before serving.

- Ensure crepes are thin and even for best texture.
- Allow lasagna to rest for a few minutes before slicing to maintain structure.
