Description

A delicious twist on lasagna using layered savory crepes instead of traditional pasta.


Ingredients

  • 3 cups milk
  • 4 eggs
  • 2 tbsp butter (melted)

  • 1 lb ground beef or turkey
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 cups milk (for cheese sauce)
  • 2 tbsp butter (for cheese sauce)
  • 2 tbsp all-purpose flour (for cheese sauce)
  • 1 cup grated cheese (Cheddar/Parmesan)
  • Salt and pepper to taste (for cheese sauce)
  • 1/2 cup grated mozzarella cheese for topping
  • Fresh parsley for garnish

Instructions

  1. Prepare the Crepes:
    • Mix flour and salt in a large bowl.
    • In another bowl, whisk milk, eggs, and melted butter.
    • Gradually add the wet ingredients to the dry ingredients, whisking until smooth.
    • Heat a non-stick pan over medium heat. Pour 1/4 cup of batter, swirling to coat the pan. Cook until golden, then flip and cook the other side.
    • Repeat for all batter, stacking crepes with parchment paper in between.
  2. Make the Meat Sauce:
    • In a skillet, cook onion and garlic until translucent.
    • Add ground meat, cooking until browned. Drain excess fat.
    • Stir in tomato sauce, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  3. Prepare the Cheese Sauce:
    • In a saucepan, melt butter over medium heat.
    • Stir in flour to form a roux. Cook for 1 minute.
    • Gradually add milk, whisking continuously until thickened.
    • Stir in cheese until melted. Season with salt and pepper.
  4. Assemble the Crepe Lasagna:
    • Preheat oven to 350°F (175°C).
    • In a baking dish, layer a crepe, spread a thin layer of meat sauce, and a drizzle of cheese sauce.
    • Repeat with remaining ingredients, finishing with a crepe on top.
    • Sprinkle with mozzarella cheese.
  5. Bake:
    • Cover with foil and bake for 20 minutes.
    • Remove foil and bake for an additional 10 minutes or until cheese is bubbly and golden.
  6. Serve:
    • Sprinkle with fresh parsley before serving.
