- 1 tsp baking soda
- 2 tsp ground ginger
- 2 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1/2 cup molasses
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
- In another bowl, cream together the butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla; mix until smooth.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Scoop tablespoon-sized dough onto prepared sheets and bake for 8-10 minutes until edges are set but centers remain soft.
- Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks.
Notes
- Store cookies in an airtight container to maintain freshness.
- For a spicier flavor, add more ground ginger or switch out half the all-purpose flour for whole wheat flour.
