Ingredients

  • 200 grams Enoki mushrooms (cleaned and trimmed)
  • 2 large Eggs
  • 1 cup All-purpose flour
  • 1 tablespoon Cornstarch or potato starch
  • 1 teaspoon Salt
  • 2 tablespoons Green onions (finely chopped)
  • 1 teaspoon Black pepper
  • 2 tablespoons Regular soy sauce
  • 1 tablespoon Rice vinegar or alternative vinegar
  • 1 teaspoon Sesame oil
  • Sesame seeds (optional garnish)

Instructions

  1. Whisk together the batter ingredients in a mixing bowl until smooth.
  2. Incorporate the enoki mushrooms and green onions into the batter.
  3. Heat the vegetable oil in a skillet over medium heat until shimmering.
  4. Pour the batter into the skillet, shaping pancakes to your desired size.
  5. Cook until golden brown on both sides, about 3-4 minutes per side.
  6. Mix together the dipping sauce in a bowl.
  7. Serve the pancakes hot, garnished with sesame seeds and the dipping sauce.
