- 1 tablespoon Vegetable oil (for frying)
- 200 grams Enoki mushrooms (cleaned and trimmed)
- 2 large Eggs
- 1 cup All-purpose flour
- 1 tablespoon Cornstarch or potato starch
- 1 teaspoon Salt
- 2 tablespoons Green onions (finely chopped)
- 1 teaspoon Black pepper
- 2 tablespoons Regular soy sauce
- 1 tablespoon Rice vinegar or alternative vinegar
- 1 teaspoon Sesame oil
- Sesame seeds (optional garnish)
Instructions
- Whisk together the batter ingredients in a mixing bowl until smooth.
- Incorporate the enoki mushrooms and green onions into the batter.
- Heat the vegetable oil in a skillet over medium heat until shimmering.
- Pour the batter into the skillet, shaping pancakes to your desired size.
- Cook until golden brown on both sides, about 3-4 minutes per side.
- Mix together the dipping sauce in a bowl.
- Serve the pancakes hot, garnished with sesame seeds and the dipping sauce.
Notes
- Make sure to adjust the frying time based on the thickness of the pancakes.
- These pancakes can also be served with a variety of dipping sauces.
