Delicious caramelized sugar cookies with a crispy crust.

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2–3 tbsp granulated sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer or whisk until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the creamed mixture and beat until fully combined.
- In a separate bowl, whisk together the flour, salt, and baking soda. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
- Once the cookies are cool, sprinkle about 1 teaspoon of granulated sugar on top of each cookie and caramelize the sugar using a kitchen torch until it melts and forms a crispy crust.

- Ensure the butter is softened for easy mixing.
- Space the cookies 2 inches apart to allow for spreading.
