- 8 corn or flour tortillas
- 2 cups shredded sharp cheddar cheese
- 1 can (14 oz) diced tomatoes with green chilies
- 1 medium onion, finely chopped
- 1 cup enchilada sauce
- ¼ cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, sauté the ground beef and onion until the beef is browned and onions are translucent.
- Add diced tomatoes, salt, pepper, and any desired spices; simmer for 5 minutes.
- On each tortilla, place some beef mixture and sprinkle cheese before rolling them up tightly.
- Arrange rolled enchiladas seam-side down in a greased baking dish.
- Pour enchilada sauce over the top and sprinkle remaining cheese.
- Bake for 20-25 minutes until bubbling and golden brown.
