- 1 loaf French bread
- 2 cups cooked, shredded rotisserie chicken
- 1 cup BBQ sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup thinly sliced red onion
- 2 tbsp olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine shredded chicken with BBQ sauce until well coated.
- Slice the French bread in half lengthwise and drizzle olive oil over each half.
- Evenly spread the BBQ chicken mixture on the bread halves.
- Top with shredded cheese and thinly sliced red onions.
- Bake for 15-20 minutes until cheese is bubbly and golden brown.
- Remove from oven, garnish with cilantro if desired, let cool slightly, slice, and serve.
Notes
- Can be served with a side salad for a complete meal.
- Feel free to add other toppings like jalapeños or bell peppers.
