Description

Ingredients

  • 1 lb ground beef or chicken
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 large flour tortillas
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tbsp olive oil
  • 1 cup cooked rice
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the Meat:
    – Heat olive oil in a large skillet over medium heat.
    – Add the diced onion and garlic, sauté until softened.
    – Add the ground meat and cook until browned. Drain excess fat.
    – Stir in taco seasoning, following package instructions.
  2. Prepare the Filling:
    – Add the diced bell pepper to the meat mixture and cook for 3-4 minutes.
    – Stir in black beans, rice, and half of the salsa.
    – Cook everything together for an additional 5 minutes, adjusting salt and pepper to taste.
  3. Assemble the Burritos:
    – Warm the tortillas in the microwave or on a skillet for easier folding.
    – Spread a spoonful of sour cream onto each tortilla.
    – Add a generous scoop of the meat and bean mixture.
    – Top with shredded cheese, remaining salsa, and cilantro.
  4. Wrap the Burritos:
    – Fold the sides of the tortilla over the filling.
    – Roll from the bottom up to fully encase the filling.
  5. Cook the Burritos:
    – In a clean skillet, cook each burrito seam-side down for 2-3 minutes until browned and crispy. Flip and repeat on the other side.

Notes

  • For extra flavor, add a dash of hot sauce to the filling.
  • Substitute or add pinto or kidney beans for variety.
  • To make it vegetarian, omit the meat and add extra beans or roasted vegetables.
