These hearty meat and bean burritos are packed with flavor and are perfect for a satisfying meal!
Ingredients

- 1 lb ground beef or chicken
- 1 can (15 oz) black beans, rinsed and drained
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 large flour tortillas
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tbsp olive oil
- 1 cup cooked rice
- 1 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Cook the Meat:
– Heat olive oil in a large skillet over medium heat.
– Add the diced onion and garlic, sauté until softened.
– Add the ground meat and cook until browned. Drain excess fat.
– Stir in taco seasoning, following package instructions. - Prepare the Filling:
– Add the diced bell pepper to the meat mixture and cook for 3-4 minutes.
– Stir in black beans, rice, and half of the salsa.
– Cook everything together for an additional 5 minutes, adjusting salt and pepper to taste. - Assemble the Burritos:
– Warm the tortillas in the microwave or on a skillet for easier folding.
– Spread a spoonful of sour cream onto each tortilla.
– Add a generous scoop of the meat and bean mixture.
– Top with shredded cheese, remaining salsa, and cilantro. - Wrap the Burritos:
– Fold the sides of the tortilla over the filling.
– Roll from the bottom up to fully encase the filling. - Cook the Burritos:
– In a clean skillet, cook each burrito seam-side down for 2-3 minutes until browned and crispy. Flip and repeat on the other side.
Notes
- For extra flavor, add a dash of hot sauce to the filling.
- Substitute or add pinto or kidney beans for variety.
- To make it vegetarian, omit the meat and add extra beans or roasted vegetables.
- For a smoky flavor, consider adding chopped chipotle peppers in adobo sauce.
