- 1 lbs chicken thighs or breasts, cut into chunks
- 2 cups fresh pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 3 cloves garlic, minced
- 1/3 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar or apple cider vinegar
- 1 teaspoon sesame oil
- 1 tablespoon grated fresh ginger
- 1 teaspoon cornstarch (optional)
- Chopped cilantro or green onions for garnish (optional)
Instructions
- In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Set aside half the mixture for drizzling later.
- Place chicken in a bowl or bag, pour in half the marinade, and marinate for at least 20 minutes or up to 8 hours.
- Preheat oven to 425°F (220°C). Line a sheet pan with parchment or foil and lightly grease.
- Spread bell peppers, onion, and pineapple evenly over the pan. Add chicken, arranging everything in a single layer.
- Roast for 25–30 minutes, flipping halfway, until chicken is cooked and everything has caramelized.
- Simmer reserved marinade in a pot and thicken with cornstarch slurry if desired. Drizzle over finished dish.
- Serve hot over rice, cauliflower rice, or grain of choice. Garnish with cilantro or green onions.
Notes
- For best flavor, marinate the chicken for the full 8 hours.
- This dish pairs beautifully with a side of rice or fresh salad.
