Description

A delicious and easy chicken dish featuring tender chicken and sweet pineapple, perfect for any night of the week.


Ingredients

  • 1 lbs chicken thighs or breasts, cut into chunks
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1/3 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon cornstarch (optional)
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Set aside half the mixture for drizzling later.
  2. Place chicken in a bowl or bag, pour in half the marinade, and marinate for at least 20 minutes or up to 8 hours.
  3. Preheat oven to 425°F (220°C). Line a sheet pan with parchment or foil and lightly grease.
  4. Spread bell peppers, onion, and pineapple evenly over the pan. Add chicken, arranging everything in a single layer.
  5. Roast for 25–30 minutes, flipping halfway, until chicken is cooked and everything has caramelized.
  6. Simmer reserved marinade in a pot and thicken with cornstarch slurry if desired. Drizzle over finished dish.
  7. Serve hot over rice, cauliflower rice, or grain of choice. Garnish with cilantro or green onions.
