Description

A delicious and comforting dish featuring seared chicken, roasted Yukon Gold potatoes, and a creamy Parmesan sauce.


Ingredients

  • 1 lb chicken breasts or thighs, diced
  • 1 lb Yukon Gold potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 3/4 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube potatoes, dice chicken, mince garlic, and grate Parmesan cheese.
  2. Place cubed potatoes on a baking sheet, drizzle with olive oil, season with salt, pepper, and Italian seasoning. Roast for 20–25 minutes until golden and tender.
  3. In a skillet over medium-high heat, sear chicken with olive oil, salt, pepper, and Italian seasoning until golden and just cooked through. Set aside.
  4. In the same skillet, sauté garlic for 30–60 seconds, then add heavy cream. Stir in half the Parmesan and simmer until slightly thickened.
  5. Combine roasted potatoes and chicken in a baking dish. Pour the sauce over and toss gently. Sprinkle remaining Parmesan on top.
  6. Bake for 10–15 minutes until bubbly and golden. Broil for 2–3 minutes if extra color is desired.
  7. Rest for 5 minutes. Garnish with fresh parsley and serve hot.

Notes

  • Feel free to use any type of chicken you prefer.
  • Fresh parsley can be omitted for a simpler presentation.
