A delicious and comforting dish featuring seared chicken, roasted Yukon Gold potatoes, and a creamy Parmesan sauce.

- 1 lb chicken breasts or thighs, diced
- 1 lb Yukon Gold potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese
- 3/4 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C). Peel and cube potatoes, dice chicken, mince garlic, and grate Parmesan cheese.
- Place cubed potatoes on a baking sheet, drizzle with olive oil, season with salt, pepper, and Italian seasoning. Roast for 20–25 minutes until golden and tender.
- In a skillet over medium-high heat, sear chicken with olive oil, salt, pepper, and Italian seasoning until golden and just cooked through. Set aside.
- In the same skillet, sauté garlic for 30–60 seconds, then add heavy cream. Stir in half the Parmesan and simmer until slightly thickened.
- Combine roasted potatoes and chicken in a baking dish. Pour the sauce over and toss gently. Sprinkle remaining Parmesan on top.
- Bake for 10–15 minutes until bubbly and golden. Broil for 2–3 minutes if extra color is desired.
- Rest for 5 minutes. Garnish with fresh parsley and serve hot.
Notes
- Feel free to use any type of chicken you prefer.
- Fresh parsley can be omitted for a simpler presentation.
