Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round baking pan.
- Prepare Cake Batter: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In another bowl, sift together the flour, baking powder, and salt. Gradually add to the creamed mixture, mixing until just combined.
- Bake: Pour the batter into the prepared baking pan. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
- Prepare Whipped Cream: In a chilled bowl, whip the heavy cream until soft peaks form. Add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
- Assemble the Cake: Once the cake is completely cooled, spread the whipped cream evenly on top. Arrange the banana, kiwi, strawberries, and blueberries on top of the whipped cream. Add fruit cocktail, if using.
- Garnish: Drizzle with chocolate or caramel sauce. Dust with powdered sugar and garnish with mint leaves.
