Description

Delicious chipotle chicken wraps filled with grilled chicken, sautéed vegetables, and ranch dressing.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lbs)
  • 2 tbsp chipotle adobo sauce
  • 1/2 cup ranch dressing
  • 4 large flour tortillas
  • 1 cup bell peppers, sliced (any color)
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Preheat your grill or skillet over medium heat. Season chicken with salt and pepper. Grill or sauté for 6-7 minutes per side until fully cooked.
  2. In a small bowl, mix ranch dressing with chipotle adobo sauce; adjust spice level to taste.
  3. Sauté bell peppers and red onions in olive oil for about 5 minutes until softened yet crunchy.
  4. Lay a tortilla on a clean surface. Add grilled chicken, sautéed veggies, drizzle with chipotle ranch sauce, and sprinkle cheese.
  5. Fold sides of the tortilla and roll tightly from the bottom up. Optionally grill seam-side down until crispy.
  6. Slice in half diagonally and serve with sour cream and extra ranch sauce on the side.
