Description
Delicious chipotle chicken wraps filled with grilled chicken, sautéed vegetables, and ranch dressing.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 2 tbsp chipotle adobo sauce
- 1/2 cup ranch dressing
- 4 large flour tortillas
- 1 cup bell peppers, sliced (any color)
- 1/2 cup red onion, thinly sliced
- 1/2 cup sour cream or Greek yogurt
- 1 cup shredded cheese (cheddar or Monterey Jack)
Instructions
- Preheat your grill or skillet over medium heat. Season chicken with salt and pepper. Grill or sauté for 6-7 minutes per side until fully cooked.
- In a small bowl, mix ranch dressing with chipotle adobo sauce; adjust spice level to taste.
- Sauté bell peppers and red onions in olive oil for about 5 minutes until softened yet crunchy.
- Lay a tortilla on a clean surface. Add grilled chicken, sautéed veggies, drizzle with chipotle ranch sauce, and sprinkle cheese.
- Fold sides of the tortilla and roll tightly from the bottom up. Optionally grill seam-side down until crispy.
- Slice in half diagonally and serve with sour cream and extra ranch sauce on the side.
