- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1/3 cup sun-dried tomatoes (in oil), chopped
- 3/4 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 2 tablespoons fresh basil, chopped
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in chopped sun-dried tomatoes and pour in chicken broth. Scrape up any browned bits from the pan.
- Add heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until smooth and slightly thickened.
- Return chicken to the skillet and spoon sauce over each piece. Simmer for 5–7 minutes.
- Garnish with chopped fresh basil and serve warm.
