Creamy Garlic Chicken with Spinach and Sun-Dried Tomatoes

Description

This creamy garlic chicken is a delicious and quick dinner option packed with flavor from sun-dried tomatoes and fresh spinach.


Ingredients

Scale
  • 2 boneless skinless chicken breasts or thighs
  • to taste Salt and pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ½ cup sun dried tomatoes, chopped
  • 1 cup fresh baby spinach
  • to taste Optional: red pepper flakes, lemon juice

Instructions

  1. Butterfly the chicken if the breasts are thick.
  2. Season both sides with salt, pepper, and Italian seasoning.
  3. Heat olive oil and butter in a large skillet over medium heat. Sear the chicken for 4 to 6 minutes per side until golden.
  4. Transfer the chicken to a plate.
  5. Add minced garlic to the same pan and cook for about 30 seconds.
  6. Add in chicken broth and scrape up browned bits.
  7. Stir in heavy cream and grated Parmesan. Let it simmer gently until it starts to thicken.
  8. Add sun dried tomatoes and spinach.
  9. Return chicken to the pan and spoon sauce over it. Simmer until chicken is cooked through.
