Description
This creamy garlic chicken is a delicious and quick dinner option packed with flavor from sun-dried tomatoes and fresh spinach.
Ingredients

- 2 boneless skinless chicken breasts or thighs
- to taste Salt and pepper
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ½ cup sun dried tomatoes, chopped
- 1 cup fresh baby spinach
- to taste Optional: red pepper flakes, lemon juice
Instructions
- Butterfly the chicken if the breasts are thick.
- Season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil and butter in a large skillet over medium heat. Sear the chicken for 4 to 6 minutes per side until golden.
- Transfer the chicken to a plate.
- Add minced garlic to the same pan and cook for about 30 seconds.
- Add in chicken broth and scrape up browned bits.
- Stir in heavy cream and grated Parmesan. Let it simmer gently until it starts to thicken.
- Add sun dried tomatoes and spinach.
- Return chicken to the pan and spoon sauce over it. Simmer until chicken is cooked through.

- This dish is excellent served over pasta or with crusty bread.
- Adjust the red pepper flakes to your desired spice level.
