- 1 cup creamy peanut butter
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup mini chocolate chips
- Confectioners’ sugar (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Beat until smooth and well combined.
- Add the egg and vanilla extract to the mixture and beat until blended, forming a thick batter.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges start to turn golden brown.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack. Decorate with mini chocolate chips for the snowman’s eyes, mouth, and buttons.

- For a sweeter touch, dust with confectioners’ sugar before serving.
