  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup mini chocolate chips
  • Confectioners’ sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Beat until smooth and well combined.
  3. Add the egg and vanilla extract to the mixture and beat until blended, forming a thick batter.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges start to turn golden brown.
  7. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack. Decorate with mini chocolate chips for the snowman’s eyes, mouth, and buttons.
