Description
A delicious and refreshing chicken salad made with poached chicken and a variety of fresh ingredients.

- 1 pound raw boneless, skinless chicken breasts
- 2 ribs celery, chopped
- 4 to 6 green olives, pitted and minced
- 1/4 cup red onion, chopped
- 1/2 to 1 apple, cored and chopped
- 1/3 head iceberg lettuce, sliced and chopped
- 5 tablespoons mayonnaise
- 1 tablespoon plum preserves
- 2 teaspoons freshly squeezed lemon juice
- Salt and pepper, to taste
Instructions
- Boil a pot of 2 quarts of well-salted water. Add the chicken breasts cut into large chunks and bring to a simmer.
- Turn off the heat and cover the pot, letting the chicken sit for about 15 minutes, or until cooked through and tender.
- Mix the dressing by combining mayonnaise, plum preserves, and lemon juice in a large bowl. Taste and adjust the sweetness, acidity, salt and pepper to your liking.
- Fold in the chopped celery, minced olives, chopped red onion, and apple to the dressing. Add more veggies if you have favorites on hand.
- Dice the poached chicken once cooled and mix into the bowl with the dressing and vegetables until well coated and blended.
- Gently combine the sliced and chopped iceberg lettuce into your chicken salad just before serving to keep it crisp and fresh.
Notes
- Poaching the chicken helps to keep it tender and juicy.
- Feel free to substitute the plum preserves with other berry preserves if desired.
