Description

A delicious and refreshing chicken salad made with poached chicken and a variety of fresh ingredients.


Ingredients

  • 1 pound raw boneless, skinless chicken breasts
  • 2 ribs celery, chopped
  • 4 to 6 green olives, pitted and minced
  • 1/4 cup red onion, chopped
  • 1/2 to 1 apple, cored and chopped
  • 1/3 head iceberg lettuce, sliced and chopped
  • 5 tablespoons mayonnaise
  • 1 tablespoon plum preserves
  • 2 teaspoons freshly squeezed lemon juice
  • Salt and pepper, to taste

Instructions

  1. Boil a pot of 2 quarts of well-salted water. Add the chicken breasts cut into large chunks and bring to a simmer.
  2. Turn off the heat and cover the pot, letting the chicken sit for about 15 minutes, or until cooked through and tender.
  3. Mix the dressing by combining mayonnaise, plum preserves, and lemon juice in a large bowl. Taste and adjust the sweetness, acidity, salt and pepper to your liking.
  4. Fold in the chopped celery, minced olives, chopped red onion, and apple to the dressing. Add more veggies if you have favorites on hand.
  5. Dice the poached chicken once cooled and mix into the bowl with the dressing and vegetables until well coated and blended.
  6. Gently combine the sliced and chopped iceberg lettuce into your chicken salad just before serving to keep it crisp and fresh.

  • Poaching the chicken helps to keep it tender and juicy.
