Description

Deliciously rich and creamy truffles blending chocolate and peanut butter for an indulgent treat.


Ingredients

  • 2 cups semi-sweet chocolate chips
  • 8 oz cream cheese, softened
  • 1/2 cup smooth peanut butter
  • 1 cup confectioners’ sugar
  • 1 tsp vanilla extract
  • 1 cup dark chocolate chips for topping
  • Optional: sea salt flakes for garnish

Instructions

  1. Prepare the Truffle Mixture:
    • In a large mixing bowl, combine softened cream cheese and confectioners’ sugar. Beat until smooth.
    • Add in the smooth peanut butter and vanilla extract. Mix until fully combined.
  2. Melt the Chocolate:
    • In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring in between to ensure the chocolate is smooth and fully melted.
  3. Combine and Chill:
    • Gently fold the melted chocolate into the peanut butter mixture until well combined.
    • Cover the mixture and refrigerate for about 1 hour or until firm enough to shape.
  4. Shape the Truffles:
    • Once the mixture is firm, use a spoon to scoop out small amounts and roll them into balls with your hands.
    • Place the truffles on a baking sheet lined with parchment paper.
  5. Coat and Decorate:
    • Melt additional dark chocolate if desired for drizzling.
    • Drizzle the melted chocolate over each truffle and immediately press a few dark chocolate chips on top for decoration.
    • Optionally, sprinkle a pinch of sea salt flakes over each truffle.
  6. Chill and Serve:
    • Return the truffles to the refrigerator for another 30 minutes to set the chocolate coating.
    • Serve chilled and enjoy!

Notes

  • For a more intense flavor, mix in a bit of espresso powder with the chocolate.
  • If the mixture is too sticky to roll, chill it a bit longer until it’s easier to handle.
  • Store the truffles in an airtight container in the refrigerator. They will keep well for up to a week.
