- 2 cups semi-sweet chocolate chips
- 8 oz cream cheese, softened
- 1/2 cup smooth peanut butter
- 1 cup confectioners’ sugar
- 1 tsp vanilla extract
- 1 cup dark chocolate chips for topping
- Optional: sea salt flakes for garnish
Instructions
- Prepare the Truffle Mixture:
- In a large mixing bowl, combine softened cream cheese and confectioners’ sugar. Beat until smooth.
- Add in the smooth peanut butter and vanilla extract. Mix until fully combined.
- Melt the Chocolate:
- In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring in between to ensure the chocolate is smooth and fully melted.
- Combine and Chill:
- Gently fold the melted chocolate into the peanut butter mixture until well combined.
- Cover the mixture and refrigerate for about 1 hour or until firm enough to shape.
- Shape the Truffles:
- Once the mixture is firm, use a spoon to scoop out small amounts and roll them into balls with your hands.
- Place the truffles on a baking sheet lined with parchment paper.
- Coat and Decorate:
- Melt additional dark chocolate if desired for drizzling.
- Drizzle the melted chocolate over each truffle and immediately press a few dark chocolate chips on top for decoration.
- Optionally, sprinkle a pinch of sea salt flakes over each truffle.
- Chill and Serve:
- Return the truffles to the refrigerator for another 30 minutes to set the chocolate coating.
- Serve chilled and enjoy!
Notes
- For a more intense flavor, mix in a bit of espresso powder with the chocolate.
- If the mixture is too sticky to roll, chill it a bit longer until it’s easier to handle.
- Store the truffles in an airtight container in the refrigerator. They will keep well for up to a week.
