Description

A delightful mix of flaky pastry, creamy custard, and fresh fruit.

Ingredients

Scale
  • 2 sheets puff pastry, thawed
  • 2 cups vanilla custard (store-bought or homemade)
  • fresh raspberries for topping
  • 1 egg beaten (for brushing)
  • powdered sugar for dusting

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Puff Pastry:
    • Roll out the puff pastry sheets on a lightly floured surface.
    • Cut the sheets into squares (about 4×4 inches).
    • Fold each corner of the square towards the center, pinching them to form a pouch shape.
  3. Apply Egg Wash:
    • Brush the tops with beaten egg to give the pastry a golden finish.
  4. Bake:
    • Place the prepared pastries on a baking sheet lined with parchment paper.
    • Bake for 15-20 minutes or until golden brown and puffy.
  5. Fill with Custard:
    • Let the pastries cool slightly.
    • Pipe or spoon vanilla custard on top of each pastry.
  6. Add Toppings:
    • Place a fresh raspberry on top of the custard for garnish.
    • Dust with powdered sugar.

Notes

  • If making custard from scratch, ensure it’s thick enough to hold shape once cooled.
  • Add a hint of lemon zest or almond extract to the custard for extra flavor.
  • Store in an airtight container in the refrigerator; best enjoyed within 1-2 days.
  • Keep puff pastry cold to make it easier to handle and to achieve better puffing in the oven.
