Flour: All-purpose flour is crucial for making sure that the batter adheres well to the wings. It brings body to the mixture, ensuring a delightful crunch upon frying.

Honey and Soy Sauce: This dynamic duo adds a rich umami depth and sweetness that makes the sauce utterly addictive. Together, they create a flavor profile that keeps everyone coming back for more.

Cooking Tips and Notes for Crispy Chicken Lollipops

Creating crispy chicken lollipops is a delightful culinary adventure that impresses both friends and family. Here are some essential tips to elevate your dish:

Choosing the Right Chicken

For the best results, opt for chicken drumsticks that are meaty and fresh. Thighs are also a great option for those who prefer a juicier bite. The richer flavor and tenderness of these cuts can make your lollipops irresistibly delicious.

Marination is Key

Don’t skip the marination process! A combination of yogurt, spices, and herbs not only infuses the chicken with flavor but also helps tenderize the meat. Aim for a marination time of at least two hours to allow the spices to penetrate deeply. If you can manage overnight, that’s even better!

Perfecting the Coating

For that ultimate crunch, consider double coating your chicken. After marinating, lightly dredge the lollipops in seasoned flour, dip them in egg wash, and then coat them again in breadcrumbs or panko. This extra layer ensures a crispier texture when fried.

Frying to Perfection

When frying your crispy chicken lollipops, use a deep pot or skillet with enough oil to allow the chicken to float freely. Keeping the oil at the right temperature (around 350°F) ensures an even cook and stunning golden color.

Let Rest Before Serving

Finally, allow your chicken lollipops to rest on a wire rack after frying. This helps maintain their crispiness by letting excess oil drain off, creating that perfect bite that everyone will rave about!

Description

Tender and delicious chicken lollipops coated with a flavorful batter, perfect as a snack or appetizer.

Ingredients

Scale
  • 10 whole chicken wings (about 900g/2lbs)
  • 500 ml oil for deep frying (approx. a little over 2 cups)
  • 60 g cornflour (cornstarch in USA)
  • 1/2 tsp baking powder
  • 1 tsp garlic salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika
  • 60 g plain (all-purpose) flour
  • 1 tbsp Chinese rice vinegar
  • 120 ml cold water
  • 1 tbsp minced ginger
  • 4 tbsp honey
  • 3 tbsp light brown sugar
  • 4 tbsp dark soy sauce
  • 2 tbsp sriracha chilli sauce
  • 3 spring onions (scallions), finely sliced

Instructions

  1. Take one of the chicken wings and place it on a secure cutting board. Using a sharp knife, carefully cut the wing into three pieces – slicing at the joints. Discard the pointy tips of the wings.
  2. Take the middle piece of the wing and carefully cut the meat around the bone at the thickest end. You don’t want to cut any meat off, you just want to detach it from the bone at one end.
  3. Push the chicken flesh down the two bones, using your fingers until the meat is pushed down to the end.
  4. Once the meat has been pushed down the two bones, the smaller bone can be removed.
  5. Take the larger piece of the chicken wing you cut earlier and cut the chicken away from the bone at the thin end.
  6. Repeat with the remaining wings. You should have 20 chicken lollipops altogether.
  7. Preheat the oven to its lowest setting.
  8. Heat the oil in a large, thick-based pan over medium heat until it reaches 175C/350F.
  9. While the oil is heating, mix the cornflour, baking powder, garlic salt, pepper, and paprika together in a large bowl.
  10. Place the chicken wings in the bowl and toss to coat them evenly.
  11. Remove the wings from the bowl and place on a plate.
  12. Add the flour, rice vinegar, and water to the remaining cornflour and mix until combined.
  13. Dip a chicken wing in the wet batter and turn to coat.
  14. Allow any excess batter to drip off and carefully add to the hot oil to deep fry.
  15. Repeat with the remaining wings.
  16. Cook for 6-8 minutes, moving the chicken around in the pan a couple of times.
  17. Once cooked, remove the chicken from the oil and place on a baking tray, keeping warm in the oven.
  18. While the chicken lollipops are cooking, make the sauce by adding all of the sauce ingredients to a small saucepan.
  19. Stir together and bring to the boil. Turn down the heat and let bubble gently for 2 minutes, then turn off the heat.
  20. Place the chicken lollipops on a tray or plate, garnishing with chopped spring onions if desired.

Notes

  • If desired, wrap the ends of the bones in foil for presentation.
