Description

Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 12 corn tortillas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • Vegetable oil for frying

Instructions

  1. In a skillet over medium heat, cook the chopped onion until translucent.

  2. Add the garlic and cook for an additional minute until fragrant.

  3. Add the ground beef, breaking it apart with a spatula. Cook until browned.

  4. Drain any excess fat, and then add chili powder, cumin, salt, and pepper. Stir to combine and let it simmer for a couple of minutes. Remove from heat.

  5. Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for about 30 seconds to make them pliable.

  6. Place about 2 tablespoons of the beef mixture on one end of a tortilla and sprinkle with cheese.

  7. Roll the tortilla tightly around the filling, securing with a toothpick if necessary.

  8. In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. Carefully place the taquitos seam side down in the oil. Fry until golden brown and crispy, about 2-3 minutes per side.

  9. Remove from oil and drain on paper towels.

Notes

  • For a healthier version, you can bake the taquitos at 400°F (200°C) for about 15-20 minutes until crispy.
  • Customize the filling by adding ingredients like black beans, corn, or diced jalapeños.
