- 4 chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet.
- Cook chicken for 5-7 minutes on each side until golden brown and cooked through.
- Remove chicken from skillet and set aside.
- Add garlic to the skillet and sauté for 1 minute.
- Pour in chicken broth and scrape the bottom to deglaze.
- Add heavy cream, sun-dried tomatoes, Italian seasoning, and spinach.
- Stir and let simmer for 3-5 minutes until sauce thickens.
- Return chicken to the skillet and coat with the sauce.
- Serve hot.
Notes
- For added flavor, marinate the chicken beforehand.
- Serve with pasta or rice for a complete meal.
