Instructions

- Press the mixture into the bottom of a serving dish to create a firm base. Chill in the refrigerator while preparing the mousse.

- Blend the fresh strawberries until smooth. Strain to remove seeds if desired.
- In a small saucepan, combine the strawberry puree and sugar. Heat gently until the sugar dissolves, then remove from heat. Stir in vanilla extract.
- Bloom the Gelatin:
- In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes. Heat gently until dissolved. Stir the gelatin into the warm strawberry mixture.
- Prepare the Mousse:
- Whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cooled strawberry mixture until well combined and smooth.
- Assemble the Dessert:
- Spoon or pipe the mousse over the prepared graham cracker base, smoothing the top.
- Refrigerate for at least 2 hours, or until the mousse is set.
- Garnish:
- Top with whipped cream and fresh strawberries.
- Dust with powdered sugar before serving.
