Ingredients

  • 1/4 cup tahini
  • 1/4 cup extra virgin olive oil, plus extra for drizzling
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 cup green olives, pitted
  • Salt to taste
  • 1/2 teaspoon ground cumin
  • 1 tablespoon fresh parsley, chopped
  • Bread slices or pita for serving

Instructions

  1. Blend Base Ingredients: In a food processor, combine chickpeas, tahini, lemon juice, garlic, cumin, and salt. Blend until the mixture is smooth, scraping down the sides as needed.
  2. Incorporate Olives: Add a half cup of the green olives to the food processor. Blend again until the olives are well incorporated, giving a creamy texture.
  3. Add Olive Oil: While the processor is running, slowly pour in the olive oil. Blend until the hummus reaches your desired consistency.
  4. Garnish: Transfer the hummus to a serving bowl. Garnish with the remaining olives and chopped parsley. Drizzle some extra virgin olive oil on top.
