Ingredients

- 4 cups fresh spinach
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
- 1 tsp dried thyme or rosemary
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and dried herbs; cook until fragrant, about 1 minute.
- Add the drained white beans and vegetable broth, bringing the mixture to a gentle simmer while stirring.
- Fold in fresh spinach until wilted, about 3 minutes.
- Season with salt, pepper, and lemon juice to taste.
- Allow the soup to simmer for an additional 10-15 minutes to meld flavors.
