Ingredients

  • 500g store-bought puff pastry or homemade
  • 500ml whole milk
  • 100g granulated sugar
  • 45g cornstarch
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 30g unsalted butter
  • Powdered sugar (for dusting)
  • Almonds or other nuts (for decoration)

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C (390°F).
  2. Prepare the Puff Pastry: Roll out the puff pastry to a thickness of about 2-3mm on a floured surface. Cut into equal rectangles (9×12 cm), ensuring you have at least 18 pieces. Place the pastry rectangles on a baking sheet lined with parchment paper. Prick the pastry with a fork to prevent it from puffing too much. Cover with another sheet of parchment paper and place a baking tray on top to keep them flat. Bake for 15-20 minutes until golden brown. Allow to cool.
  3. Make the Vanilla Pastry Cream: In a saucepan, heat the milk and vanilla until simmering. In a bowl, whisk egg yolks, sugar, and cornstarch until smooth. Slowly pour the hot milk over the egg mixture, whisking constantly. Return the mixture to the saucepan and cook on medium heat, stirring constantly until it thickens. Remove from heat and whisk in butter until smooth. Pour into a shallow dish, cover with cling film (directly on the surface to prevent a skin from forming), and chill.
  4. Assemble the Mille-Feuille: Place one piece of baked puff pastry on a serving tray. Pipe or spread a layer of chilled pastry cream over the pastry. Top with another pastry rectangle, add another layer of cream, and then a third pastry layer. Repeat the process for the remaining pastries.
  5. Finish the Dessert: Dust the top of each mille-feuille with powdered sugar. Garnish with almonds or your choice of nuts.

  • Puff Pastry: Ensure your pastry is well chilled before baking to achieve the flaky layers.
  • Pastry Cream: If it’s too thick after chilling, whisk it to return to a smooth consistency.
