- 200g dark chocolate
- 200ml heavy cream
- 500ml vanilla custard
- Butter for greasing
- Icing sugar for dusting
- Cornflakes or crumbled flakes for topping
Instructions
- Prepare the Puff Pastry:
- Preheat your oven to 200°C (390°F).
- Roll out the puff pastry sheets to ensure they are even.
- Place them on a baking tray lined with parchment paper.
- Prick the pastry sheets with a fork to prevent them from puffing up too much.
- Bake for 15-20 minutes or until golden and crispy.
- Let them cool completely.
- Make the Chocolate Ganache:
- Heat the heavy cream in a saucepan until it just begins to boil.
- Pour the hot cream over chopped dark chocolate in a bowl.
- Stir until the chocolate is fully melted and the mixture is smooth.
- Assemble the Mille-Feuille:
- Place one sheet of puff pastry on a serving platter.
- Spread a layer of vanilla custard evenly over the pastry.
- Place the second puff pastry sheet on top and repeat with custard.
- Top with the third puff pastry sheet.
- Add the Chocolate Topping:
- Pour the chocolate ganache over the top of the assembled mille-feuille.
- Allow some ganache to drip down the sides for a decorative effect.
- Finish with Toppings:
- Sprinkle crushed cornflakes on top for added texture and a slight crunch.
- Dust with icing sugar for a sweet touch.
Notes
- Make sure the pastry is fully cooled before assembly to prevent the custard from melting.
- For extra flavor, you can add a splash of rum or almond extract to the custard.
- Allow the assembled mille-feuille to chill in the fridge for an hour before serving to set properly.
- Serve with fresh berries on the side for a refreshing contrast.
