This delicious rice recipe combines flavorful chicken broth, green chilis, and fresh cilantro for a delightful side dish or a base for a burrito bowl.

- 2 cups rice (long grain, short grain, jasmine, or basmati)
- 4 cups chicken broth
- 1 can (4-ounce) green chilis (drained)
- 4 tablespoons butter
- 1 tablespoon garlic (minced)
- 1/2 bunch cilantro (minced)
- 1 large lime (juiced)
Instructions
- In a rice cooker, add the rice, chicken broth, green chilis, butter, and garlic. Cover and set the rice cooker to “white rice.” Don’t open the lid until it has finished cooking.
- Once the rice has finished cooking, let it sit for a couple minutes to cool. Add the cilantro and fresh lime juice, then fluff and stir with a fork.
- Serve in a burrito bowl, salad, taco, or as a side dish. Enjoy!
Notes
- For a spicier dish, use more green chilis or add jalapeños.
- This recipe pairs well with grilled chicken or shrimp.
