Description

This delicious rice recipe combines flavorful chicken broth, green chilis, and fresh cilantro for a delightful side dish or a base for a burrito bowl.

Ingredients

Scale
  • 2 cups rice (long grain, short grain, jasmine, or basmati)
  • 4 cups chicken broth
  • 1 can (4-ounce) green chilis (drained)
  • 4 tablespoons butter
  • 1 tablespoon garlic (minced)
  • 1/2 bunch cilantro (minced)
  • 1 large lime (juiced)

Instructions

  1. In a rice cooker, add the rice, chicken broth, green chilis, butter, and garlic. Cover and set the rice cooker to “white rice.” Don’t open the lid until it has finished cooking.
  2. Once the rice has finished cooking, let it sit for a couple minutes to cool. Add the cilantro and fresh lime juice, then fluff and stir with a fork.
  3. Serve in a burrito bowl, salad, taco, or as a side dish. Enjoy!

Notes

  • For a spicier dish, use more green chilis or add jalapeños.
  • This recipe pairs well with grilled chicken or shrimp.
