Description
A delicious dish of chicken breasts cooked in a rich tomato sauce topped with fresh mozzarella and basil.
Ingredients

- 2 lbs boneless, skinless chicken breast
- 1/4 cup extra virgin olive oil
- 2 tbsp capers, drained (optional)
- 3 cloves garlic
- 28 oz San Marzano tomatoes, passata or canned tomato puree
- 8 oz fresh mozzarella slices
- 10 leaves basil
- salt and pepper to taste
- red pepper flakes (optional)
Instructions
- First, cut the chicken breasts lengthwise if they’re thick.
- Next, in a large skillet on medium high heat, add the olive oil and chopped or minced garlic and cook for 30 seconds.
- Then, add the chicken breasts and cook for about 3 minutes on each side and remove.
- Next, add the capers (if using) into the pan followed by the tomato puree. Cook on medium high heat for about five minutes. NOTE: If using San Marzano tomatoes, you may need to puree them first.
- Then, add the chicken back into the pan, add salt and pepper to taste and cook covered for 20 minutes.
- Next, add the sliced mozzarella to the tops of each chicken breast and add the basil leaves to the sauce. Cover and cook until the cheese melts.
- Optional: Sprinkle with red pepper flakes if you wish.
- Tip: Allow the chicken to sit uncovered for 5-10 minutes so the sauce can thicken a bit.
Notes
- Allowing the chicken to rest after cooking helps to enhance the flavors and thicken the sauce.
