Description

Ingredients

  • 2 large potatoes, peeled and grated
  • 1 cup sharp cheddar cheese, grated
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 tablespoons chives, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Butter or cooking spray for greasing

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or cooking spray.
  2. Prepare the Potatoes:
    Peel and grate the potatoes. Place the grated potatoes in a clean cloth and squeeze out excess moisture.
  3. Mix the Ingredients:
    In a large bowl, combine the grated potatoes, eggs, milk, and cheddar cheese. Add sour cream, garlic powder, salt, and pepper. Mix until well combined.
  4. Fill the Muffin Tin:
    Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle additional cheese on top for a golden crust.
  5. Bake:
    Place the muffin tin in the preheated oven. Bake for 25-30 minutes or until the tops are golden brown and crispy.
  6. Garnish:
    Remove from the oven and let cool slightly. Garnish with chopped chives before serving.
