- 2 large potatoes, peeled and grated
- 1 cup sharp cheddar cheese, grated
- 2 eggs
- 1/2 cup milk
- 1/2 cup sour cream
- 2 tablespoons chives, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Butter or cooking spray for greasing
Instructions
- Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or cooking spray. - Prepare the Potatoes:
Peel and grate the potatoes. Place the grated potatoes in a clean cloth and squeeze out excess moisture. - Mix the Ingredients:
In a large bowl, combine the grated potatoes, eggs, milk, and cheddar cheese. Add sour cream, garlic powder, salt, and pepper. Mix until well combined. - Fill the Muffin Tin:
Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle additional cheese on top for a golden crust. - Bake:
Place the muffin tin in the preheated oven. Bake for 25-30 minutes or until the tops are golden brown and crispy. - Garnish:
Remove from the oven and let cool slightly. Garnish with chopped chives before serving.
Notes
- For added flavor, mix in cooked bacon bits or sautéed onions.
