- 4 large eggs

Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onions and cook until translucent.
- Add diced potatoes and season with salt and pepper.

- Make four wells in the potato mixture and crack an egg into each well.
- Sprinkle cheese over the eggs and cover the skillet.
- Cook until eggs are set and cheese is melted.
- Garnish with chopped parsley before serving.
