  • 8 large flour tortillas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Beef Filling: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent. Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat, then add chili powder, cumin, salt, and pepper. Stir well to coat the beef with spices.
  3. Assemble the Roll-Ups: Lay out each tortilla. Spread about 1-2 tablespoons of enchilada sauce over each. Add a generous spoonful of beef mixture and a sprinkle of cheese. Roll each tortilla tightly and place seam side down in a large baking dish.
  4. Bake: Pour remaining enchilada sauce over the top of the roll-ups. Sprinkle with additional cheese. Cover with foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
  5. Serve: Remove from oven and let cool slightly. Garnish with fresh cilantro if desired.
