Instructions

  1. Prepare the Cake Layers: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. In a separate large bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined. Divide the batter evenly between the two prepared cake pans.
  2. Bake the Cake: Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  3. Make the Filling: In a medium bowl, beat the heavy cream and powdered sugar until soft peaks form. Gently fold in the almond paste (if using) to enhance the almond flavor.
  4. Prepare the Caramel Almond Topping: Spread a thin layer of caramel sauce over the top of one of the cooled cake layers. Sprinkle half of the toasted almonds over the caramel layer.
  5. Assemble the Cake: Place the second cake layer on top. Spread the whipped cream mixture over the top layer. Drizzle with more caramel sauce and sprinkle the remaining toasted almonds on top.
