- 1/2 cup heavy cream
- 1 teaspoon coconut extract
- 2–3 drops blue food coloring
- 1 cup desiccated coconut (plus extra for garnish)
- 1/4 cup powdered sugar
- Edible silver sprinkles (optional, for decoration)
Instructions
- Melt the White Chocolate: Place the white chocolate chips in a heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the heated cream over the chocolate and let it sit for a minute. Stir until the chocolate is completely melted and smooth.
- Add Flavor and Color: Stir in the coconut extract for flavor. Add blue food coloring one drop at a time, mixing until you achieve your desired shade.
- Combine with Coconut: Fold in the desiccated coconut until well combined. Stir in powdered sugar to adjust sweetness, if desired.
- Chill the Mixture: Cover the bowl and refrigerate for about 1-2 hours, or until the mixture is firm enough to handle.
- Shape the Truffles: Scoop small spoonfuls of the mixture and roll them into balls using your hands. Place the truffles onto a lined baking sheet.
- Decorate: Roll each truffle in additional desiccated coconut for a snowy effect. Top with edible silver sprinkles for a festive touch, if desired.
- Set and Serve: Chill the truffles in the refrigerator for another 30 minutes to set. Serve cold and enjoy!
