Description

Delicious and festive Blue Chocolate Coconut Truffles that are perfect for any occasion.

Ingredients

Scale
  • 1 1/2 cups white chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon coconut extract
  • 23 drops blue food coloring
  • 1 cup desiccated coconut (plus extra for garnish)
  • 1/4 cup powdered sugar
  • Edible silver sprinkles (optional, for decoration)

Instructions

  1. Melt the White Chocolate: Place the white chocolate chips in a heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer. Pour the heated cream over the chocolate and let it sit for a minute. Stir until the chocolate is completely melted and smooth.
  2. Add Flavor and Color: Stir in the coconut extract for flavor. Add blue food coloring one drop at a time, mixing until you achieve your desired shade.
  3. Combine with Coconut: Fold in the desiccated coconut until well combined. Stir in powdered sugar to adjust sweetness, if desired.
  4. Chill the Mixture: Cover the bowl and refrigerate for about 1-2 hours, or until the mixture is firm enough to handle.
  5. Shape the Truffles: Scoop small spoonfuls of the mixture and roll them into balls using your hands. Place the truffles onto a lined baking sheet.
  6. Decorate: Roll each truffle in additional desiccated coconut for a snowy effect. Top with edible silver sprinkles for a festive touch, if desired.
  7. Set and Serve: Chill the truffles in the refrigerator for another 30 minutes to set. Serve cold and enjoy!

Notes

  • For a richer flavor, consider toasting the desiccated coconut lightly before mixing it in.
  • Adjust the amount of blue food coloring based on the intensity of color you prefer.
  • Store the truffles in an airtight container in the fridge for up to a week.
  • For a different flavor variation, add a teaspoon of vanilla or almond extract along with the coconut extract.
