Description

A delicious and hearty meal featuring beef kielbasa, potato gnocchi, and fresh vegetables.


Ingredients

  • 1 pound Beef Kielbasa, sliced into ½-inch thick rounds
  • 1 pound Shelf-Stable Potato Gnocchi
  • 1 medium yellow onion, finely chopped
  • 3 cloves of minced garlic
  • 1 red or orange bell pepper, chopped into bite-sized pieces
  • 1 can (14.5 oz) of diced tomatoes (undrained)
  • 2 cups Low-sodium chicken or beef broth
  • 2 cups Fresh spinach
  • 1 tablespoon Italian seasoning blend
  • to taste Salt
  • to taste Black pepper
  • to taste Red pepper flakes (optional)
  • ½ cup Freshly grated Parmesan cheese

Instructions

  1. Prep Your Ingredients: Slice your beef kielbasa, chop your onion and bell pepper, and mince your garlic.
  2. Brown the Kielbasa: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced beef kielbasa and cook for about 3-5 minutes until browned. Remove the kielbasa and set aside.
  3. Sauté the Aromatics and Veggies: Reduce heat to medium. Add the chopped onion and bell pepper to the skillet and cook for 5-7 minutes until softened. Add minced garlic and Italian seasoning, cooking for another minute.
  4. Build the Sauce and Cook the Gnocchi: Pour in the diced tomatoes and chicken or beef broth. Stir and bring to a gentle simmer. Add the gnocchi and simmer for 3-5 minutes until tender.
  5. Finish with Greens and Cheese: Return the kielbasa to the skillet, add fresh spinach, and stir until wilted. Stir in half of the Parmesan cheese until melted.
  6. Serve Immediately: Ladle into bowls and garnish with remaining Parmesan cheese.
