Description

Delicious and chewy banana oat cookies loaded with chocolate chips.


Ingredients

  • ½ cup unsalted butter (at room temperature)
  • ½ cup light brown sugar (packed)
  • ⅓ cup granulated sugar
  • ½ cup mashed banana (about 2 small bananas or 1 large)
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup old fashioned oats
  • ⅔ cup semi sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper. Set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment or with an electric hand mixer in a large bowl, beat together butter and sugars until well combined.
  3. Add the banana, egg yolk, and vanilla. Mix until combined.
  4. Add flour, baking soda, and salt. Stir in until just combined.
  5. Stir in oats and chocolate chips.
  6. Use a 1 ½ tablespoon cookie scoop to scoop cookie dough and place on prepared baking sheets, about 2 inches apart.
  7. Bake for about 10-15 minutes, or until cookies are set around the edges but still soft in the center.
  8. Let cookies cool completely before removing from the baking sheets.
