Description

This delicious baked salmon dish is paired with fresh spinach and flavored with garlic and lemon.


Ingredients

Scale
  • 4 salmon fillets (about 6 oz each)
  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried dill or thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Spread the fresh spinach evenly in the dish.
  4. Place the salmon fillets on top of the spinach, spaced apart.
  5. Sprinkle minced garlic over each fillet and drizzle with olive oil and lemon juice.
  6. Season generously with salt and pepper; add dried herbs if desired.
  7. Bake for 15-20 minutes until the salmon flakes easily with a fork (internal temperature should reach 145°F).
  8. Let it rest for a couple of minutes before serving.

Notes

  • For a little extra flavor, consider adding some capers or a sprinkle of parmesan cheese before baking.
  • Serve with a side of rice or quinoa for a complete meal.
