Description
This delicious baked salmon dish is paired with fresh spinach and flavored with garlic and lemon.
Ingredients

- 4 salmon fillets (about 6 oz each)
- 4 cups fresh spinach
- 3 cloves garlic, minced
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 tsp dried dill or thyme (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with olive oil.
- Spread the fresh spinach evenly in the dish.
- Place the salmon fillets on top of the spinach, spaced apart.
- Sprinkle minced garlic over each fillet and drizzle with olive oil and lemon juice.
- Season generously with salt and pepper; add dried herbs if desired.
- Bake for 15-20 minutes until the salmon flakes easily with a fork (internal temperature should reach 145°F).
- Let it rest for a couple of minutes before serving.
Notes
- For a little extra flavor, consider adding some capers or a sprinkle of parmesan cheese before baking.
- Serve with a side of rice or quinoa for a complete meal.
