Description

Delicious and crispy air fryer chicken sandwich brined in pickle juice and buttermilk.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup pickle juice
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon powdered sweetener
  • 1 teaspoon cayenne pepper (Optional)
  • 1 egg (beaten)
  • cooking oil (peanut oil recommended)
  • 2 buns (brioche recommended)
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (Optional)
  • 4 slices fresh tomatoes (Optional)
  • 1/4 cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ Sauce (hickory smoked)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon xanthan gum

Instructions

  1. Brine the chicken by adding it to a sealable bag or large bowl with pickle juice and buttermilk. Refrigerate for 30 minutes.
  2. In a large bowl, combine flour, paprika, garlic powder, salt, pepper, and sweetener.
  3. Add the egg to a separate bowl.
  4. Spray the air fryer basket with cooking oil.
  5. Remove the chicken from the marinade, dredge in the beaten egg, and then in the flour mixture. Place in the air fryer basket.
  6. Spritz the top of the chicken with peanut oil and air fry at 400 degrees for 15 minutes.
  7. Flip the chicken carefully, spritz the other side and air fry for an additional 5-7 minutes until crisp and cooked through (165 degrees F).
  8. Toast the buns for 3-4 minutes at 400 degrees.
  9. Assemble the sandwich with mayo, honey, BBQ sauce, mustard, chicken, lettuce, tomato, and pickles.
  10. For the sauce, combine mayo, honey, BBQ sauce, and mustard in a bowl. For thicker sauce, add xanthan gum with 2 teaspoons of the sauce.

Notes

  • Buttermilk can be substituted with milk mixed with vinegar or lemon juice.
  • The use of egg in dredging is optional but recommended for holding the breading.
