Description
A simple and delicious recipe for air frying acorn squash.
Ingredients
Scale
- 1 whole acorn squash (cut into slices)
- 1 pinch salt (more when done to taste)
- 1 tsp olive oil (or avocado oil)
- 1 tbsp parsley (chopped)
Instructions
- Slice the acorn squash into disks. Remove any of the seeds.
- Place into air fryer without overlapping and brush olive oil on top, or use spray. Sprinkle salt and pepper on top.
- Air fry for 10-12 minutes at 350 F. or as long as it takes to get as fork tender as you’d like.
- Garnish with diced parsley.
Notes
- The squash can be seasoned more after cooking, if desired.
- Adjust cooking time based on your air fryer model for optimal tenderness.
